Bhut Jolokia (Ghost Pepper)

So, you think you want some HEAT in your whipped garlic do you??? Well, we had so many requests for a really hot Lebanese Breeze recipe, we started looking for a pepper that would satisfy those heat lovers out there. We came up with what at the time was THE HOTTEST PEPPER in the WORLD...the Bhut Jolokia pepper or what is called "Ghost Pepper" here in the USA.
Recently, two other peppers were developed (Jolokia hybrid) that took over the record for heat, but trust me, Ghost Pepper is still knock-your-socks-off hot. Here are some quick facts about these peppers:
- One Ghost Pepper is equal to 100 Jalapeno peppers in terms of heat
- Held the Guinness Book of World Record on the heat index for several years.
- Flavor - There are peppers out there that are just hot and have little flavor, but the Ghost Pepper is very flavorful.
- Scoville Units - the Scoville index is a standard measurement used to rate the heat of chili peppers. The Ghost Pepper is rated between 995,000 - 1.4 million units. How hot is that? Jalapeno peppers are rated at 2,500 - 8,000 units.
So, how did we come up with how much to use in our Jalapeno-Jolokia recipe? VERY CAREFULLY...seriously though, my mouth was burned a few times, but I finally came up with just the right amount to make our Jalapeno-Jolokia recipe super hot, but not take away from the flavor. If you want to add some heat to just about any dish, this is the whipped garlic for you.
